Ingredients
- 1 whole garlic bulb (1 whole garlic bulb contains 8–15 cloves, depending on the variety and size.)
- 2 tsp red chilli powder (adjust to your preferred spice level).
- ½ tsp salt (adjust to taste)
- 2 tbsp coconut oil
Method
- Separate the garlic cloves and lightly crush them using a traditional stone crusher only. Keep the skins on while crushing to enhance the rustic flavour, then remove any loose pieces of skin if preferred.
- Transfer the crushed garlic to a bowl.
- Add the red chilli powder, salt, and coconut oil.
- Mix everything well until the garlic is evenly coated with the spices and oil.

This chutney is a perfect accompaniment to dosas. Its bold, spicy garlic flavour makes it an excellent side dish for simple South Indian breakfasts.
Storage
This chutney is best enjoyed fresh. Since it contains raw garlic and no preservatives or tempering, it is not suitable for storage. Prepare only the quantity you need and consume it immediately for the best taste and freshness.
